Chinese Tea Egg

My little Asian market lady, Serena, used to make these at her store and I would buy them all of the time. The health department wouldn't let her do that anymore so I haven't had one in so long. I decided just to make my own.

It's real easy, they just have to steep in the sauce all day so it takes a while. It's well worth the wait though!

1. Hard boil eggs

2. To a pot of water add Oolong tea bags, soy sauce, anise seed, cinnamon and sugar



3. Crack the egg shells but leave the shell in



4. Steep the eggs in the sauce all day on low, covered





5. Serve either warm or cold. I like them better warm.

I can't wait to try these! Another use for my star anise. I am Pho'ed out for a while. I have an Ox Tail coming in tomorrow, though.

OK so you hard boil the eggs first and then crack them a little and them steep them?

I'm phoed out too!! Yes, hard boil first! I kind of undercooked the eggs a little when I boiled them since they would be in the hot sauce for so long.
