Asian Pork Tenderloin and Veggies



My daughter loves snow peas.  When I make things that she likes, she tends to help me in the kitchen more.  I love to cook with her and to watch her get excited about food.  When I told her what we were having tonight started to tell me what she would put in the sauce for the noodles.  LOVE!

Ingredients:
Pork Tenderloin - slices thin
Sesame Oil and Olive Oil
Onion- sliced thin
Garlic- minced
Ginger- grated
Carrot- sliced thin
Snow Peas
Bean Sprouts
Green Onion- chopped
Baby Bellas- Chopped thin
Cilantro
Rice Noodles

Sauce:
1 part Soy Sauce
1 part Sweet Chili Sauce
1/2 part Sherry
Optional - Sriracha to add your desired amount of heat

1. Saute onions, garlic, ginger in a little bit of sesame and olive oil until tender. Add carrot and snow peas, saute about 3-4 min then add in bean sprouts, green onion and baby bellas.  Season everything with a splash of soy sauce and cook for just a couple minutes and then remove and set aside. 

2. Add a little more oil combo to the pan, heat oil and saute pork seasoned with soy sauce until just medium rare.

3. Add back in veggies, pour in sauce just to coat everything and heat through

4. Serve over rice noodles seasoned with sesame oil and salt.  Garnish with chopped cilantro.
