I'm not sure why, but I marinated a half of a pork tenderloin in green olive juice today. I'm REALLY glad that I did! It was delicious!
I didn't make anything special with it, just seared it in a pan and then served it with sautéed mushrooms and tomatoes!
Simple, quick and surprisingly delicious!!!

My thoughts exactly when I was snacking on the olives and wondering what to do with the pork! Salty, briney, tasty.....so I went for it!! I bet it will be good for chicken too!
