Pot Roast Hash

This is a great breakfast anytime you have left over roast. Although I'm not a big fan of Bob Evans, their pot roast hash is pretty damn good. This was my take on their crowd pleaser.

Serve beef roast, red skin potatoes w/ sweet peppers, an over easy egg...all topped with shredded Monterey jack cheese.

Delish!!
