This really needs very little explanation, except that it was amazing!
Saute onion, garlic and spinach in olive oil seasoned with S&P. Set aside to cool. Butterfly a pork tenderloin.
Layer pork with spinach and goat cheese
Roll, hold closed w/ tooth pick, sear in EVOO
Bake 30 mins. @ 350 degrees for 30 mins.
I served it with Confetti Risotto and Brown Butter Sauteed White Asparagus!
