Bruschetta

This might have to go on my last dinner menu! I have no plans to die anytime soon, but if I did this would be one of the appetizers that I would request!

~French bread sliced thin, brushed with olive oil and topped with garlic salt, oregano, basil, mozzarella and Parmesan cheeses. Broiled just enough to melt the cheese but to keep the bread soft on the bottom.

~In a bowl mixed Campari tomatoes-diced and strained of most of the juices, a little bit of fresh garlic finely minced, fresh/frozen basil, olive oil, balsamic vinegar and salt. Let this marinate at room temp for a while.

~Spoon tomatoes onto bread and prepare for a heavenly snack!
