3 Chinese steamed buns
4 cups of coffee
1 King sized bag of peanut M&Ms
Leftover pasta from last night
6" Subway Crispy Chicken sub (I recommend!)
2 large diet Cokes
A whole bag of Swedish Fish
A homemade chocolate chip cookie
A bag of cheddar sour cream Lays chips
Currently sitting with a bag of waffle pretzels....craving something sweet!

This is the food diary of one stress out person! Sigh.......

Chipotle Chili Powder

My new favorite spice on grilled meat....beef, chicken or pork! AMAZINGLY good! Salt, pepper, garlic and some chipotle! Do it...you will be happy you did! Promise!!!!!

Easy Chinese Dumplings

For a quick easy meal I like to always have a couple bags of dumplings in my freezer. Lunch today was pork, shrimp and chive dumplings with mushrooms and onions in a sweet and spicy sauce!

Boil the frozen dumplings for about 10 minutes.

Sauté some mushrooms, onions, garlic and Ginger in a little olive oil. Then deglaze the pan with some mirin, added a little soy sauce, sweet chili sauce, and a dash of rice vinegar. Reduce, add dumplings and coat with sauce.

Serve with some chopped green onion!

Cajun Mushroom & Red Pepper Alfredo

When craving pasta.....must cook pasta! Baby Bellas were on sale so they took center stage in this one!

•Sauted onions, red pepper, mushrooms in EVOO seasoned with garlic powder, s&p, crushed red pepper and blackened seasoning until tender


•Add a little marinara sauce, Parmesan cheese, cream and simmer to reduce down


•Add pasta of choice, mix and dig in!

Grilled Chicken Gyro w/ Homemade Tzatziki Sauce



I needed my kitchen today!  It's like I have withdrawal symptoms if I go to long without cooking!  WEIRD!

Anyways.....so I cooked, what I'm affectionately calling, a gyro.  Really I was just craving the creamy sauce and needed something to put it on....that's where the gyro comes in.

I marinated and grilled a couple boneless skinless chicken breasts.  On top of a low carb, high fiber tortilla (in place of the pita) I piled lettuce, onion, tomato, sliced grilled chicken and tzatziki sauce.  It was delicious! 

Here's how to make the sauce:

1 small container FF Greek Yogurt
1/2 cucumber diced very small
12 mint leaves finely julienned
Juice of 1/4 of a lime
Salt to taste
Add just a dash of sugar...it was good!

My Secret Ingredient

Bay Leaves make any red sauce SO MUCH better! The secrets out! Try it!!!

Goo-Losh (my childhood comfort food)

This was one of my mom's go to weeknight meals when I was growing up! It makes me happy!!

1/2 lb ground turkey sautéd with 1/2 onion
Season with S&P, oregano, basil, garlic powder and chili powder
When cooked through add:
1 can tomato soup
1 can of corn (drained)
Simmer for a while
Add 3 C cooked pasta (elbow or rotini)
Mix together with 1 C shredded cheese
Sprinkle with more cheese and serve!

It's a bowl full of pure, simple, home cooked love!!

Rosy's Spanish Rice







My friend Lisa has a mama that can cook up some amazing, authentic Mexican food! This weekend I got my hands on her Spanish Rice recipe and made sure to steal it so that I could make it for myself! I will be using this one often. I'm thinking it could be a full meal if you added ground meat or shredded chicken!! I will be experimenting! Yum!!!

Perfect late night snack

I shouldn't be up this late but when I am I make sure to eat good!

Whole wheat pita, marinara sauce, fresh mushrooms, basil, chives, mozzarella, turkey pepperoni......yep !

YUM!!!!!



Yes, that is a ring around the bowl of Sriracha dipping sauce from my daughters water painting projects. Sorry...can't get if off, still using it, of course!!

Vegetable Pho

I've been waiting months for my order of Pho broth to come in. Today my little Chinese lady called to tell me she got it. Even though it was 90 something degrees I couldn't wait any longer for a big steaming hot, spicy bowl of noodle soup. Tonight I only used veggies. Sautéd baby bella mushrooms, onion and red pepper w/ fresh green onion, chives and basil mixed with piping hot rice noodles and Pho broth and a dash of Sriracha! Perfection!
